My Girls

These two.


I don't care how rough my day was or how bad things might seem. These two always make my day brighter and my life happier. When I see their little faces alight with big smiles I remember how blessed I really am. I am so lucky to be a mom. Their mom.

Mmm, Mmm Monday-Chicken Pot Pie Cupcakes

Wow it's been a long time since I've posted a recipe! I swear, I've been feeding my family!

I've seen this recipe floating around Pinterest and it looked right up our alley. It is a great weeknight recipe and it makes a lot so you'll have yummy leftovers for lunch the next day.

Easy peasy. My kind of recipe. ;)

This is usually my view when I'm cooking. The cheese snatchers begin to lurk.
Flatten the biscuit dough and press it into your greased muffin tins. As you can tell, this doesn't have to be an exact science.

Mix everything up and spoon the mixture into the dough.

Bake for 12-15 minutes until the dough is browned and the mixture is bubbly.

Andy: 4.5 out of 5 stars: He doesn't like peas (or most veggies) but they are hardly noticeable in this recipe.

Emma: 3 out of 5 stars: She liked the cheese and the crust. 

Sophia: 4 out of 5 stars. She ate these right up. She did not enjoy having the filling fall out once she ate the bottom of the cupcake. ;)


Chicken Pot Pie Cupcakes 
Recipe from SunnySlideUp

2 (10 oz) cans Pillsbury biscuits
2 cups cooked chicken; diced
1 cup shredded cheese
1 cup frozen vegetables
1 can cream chicken
seasonings (I used salt, pepper, thyme, garlic powder, and onion powder)

Preheat oven to 400 degrees. Mix chicken, cream of chicken, cheese, vegetables, and seasonings. Slightly flatten biscuit dough and press into greased muffin tins. Spoon mixture into dough cups and bake for 12-15 minutes.

Our Weekend

I can't remember the last time a weekend turned out the way we planned. This winter has been so rough on our family's immune system. I can't believe that I actually want winter to be over, simply because I'm sick of the sickness.

Emma has had a cold this past week and we knew that Sophia would most likely follow soon after. She woke up very early on Saturday morning with a runny nose and she seemed miserable from a tough night's sleep.  She was so clingy and whiny so we spent the day cuddled up in our pajamas.


My sister-in-law was in town, and she had planned on watching the girls so Andy and I could have a belated Valentine's Day dinner, but Sophia was so whiny that we decided to stay home. Aunt Nicole was still able to come by and visit with the girls and they were so happy to have company.


Both girls got a good night's rest last night and Emma was ready to go this morning. Andy took her to Sunday School and I stayed at home with Sophia to let her get some more rest. The plague that has infected our home must have spread to other homes because she was the only child in the three year old class. She had two teachers all to herself and she enjoyed every second of it. She sure loves being the center of attention sometimes, can't you tell? ;)
I'm really hoping that we can have a full weekend were everyone is healthy SOON! I'm ready to enjoy some fun activities with my girls!

Playing Catch Up

I promise that I haven't forgotten the blog. It's on my mind a lot, but every time I think about sitting down to post, something comes up. So here I am, forcing myself to spend a little time updating.

Emma is still doing well in school and dance. She's had to miss some days due to sickness and bad weather and she really hates to miss school. Her love for school makes me so happy. She's growing and learning so much. Sometimes she'll share something with us and we have no idea where she learned it! She's such a character.

We have had the craziest weather here. We've bounced from snow, to 70 degree weather, to ice storms, and back to warm temperatures. The girls enjoyed the snow and I enjoyed the extra time I was able to spend with them.
 







The girls and I have really been trying to be crafty. Paint, glitter, crafts...they're just not my thing. But the girls love it so much and when the weather outside is too cold, it's sometimes the only thing that can keep us all sane!
 

 
The most important news is that my baby girl turned two! I can't believe how fast two years have gone by! We decided to skip a birthday party this year because of the abundance of sickness our house has seen this winter. We had a special dinner and dessert for our birthday girl and  I don't think she missed the party! We had a great time celebrating our little one's special day!
