Mmm, Mmm Monday- Mexican Stuffed Shells

I make another stuffed shells recipe that is a staple in this house.  But every once in awhile, I need a change.  This change was fabulous!  These were so good and a yummy alternative to taco night.

Mexican Stuffed Shells
recipe from The Way to His Heart

1 pound ground beef
1 package low-sodium taco seasoning
4 oz. cream cheese
14-16 jumbo pasta shells
1 1/2 cup salsa
1 cup taco sauce
1 cup cheddar cheese
1 cup Monterrey Jack cheese

Preheat oven to 350.  Brown ground beef; add taco seasoning and prepare according to package directions.

Add cream cheese, cover and simmer until cheese is melted. Blend well.  Set aside and cool completely. While the beef is cooling, cook the pasta shells according to package directions; drain. 

Set shells out individually on cutting board so that they don't stick together.  Pour salsa on bottom of 9 x 13 dish.  Stuff each shell with the meat mixture. Place in pan open side up.  Cover shells with taco sauce.  Cover with foil and bake for 30 minutes. **The salsa and taco sauce brands that I used were the exact amount called for in the recipe**

After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed. 

Top with condiments of your choice (green onions, black olives, sour cream, more salsa).

Me: 5 out of 5 stars.  I'm definitely making this one again.  I might sneak in some corn and black beans the next time.  I'm pretty sure that ground turkey would taste just as good as well.  I used fat free cream cheese and it added plenty of creaminess without the added fat. The spiciness of this can be adjusted based on the type of salsa and taco sauce you purchase.

Andy: 5 out of 5 stars.  This is one of his new favorites.  I'm pretty sure he will request this often.

Emma: If it has ground beef, she isn't going to touch it.  She was perfectly happy with her quesadilla.

So glad you liked the Stuffed Shells! My little one is the opposite, unless it has some sort of meat she wont eat it :)
